Vegan breakfast toast four ways

This organic breakfast idea is super simple and ready in 5 minutes flat.

Method

  1. Take 4 bread slices and pop them in the toaster for 1-2 minutes.
  2. Spread 2 bread slices with peanut butter and 2 with your yoghurt/cream cheese.
  3. Place the bananas and strawberries on the bread with the peanut butter and the radishes and cucumber on the bread with yoghurt/cream cheese.
  4. Garnish the banana toastie with grated chocolate, the strawberry one with maple syrup, the toast with cucumber with sesame seeds (and salt and pepper) and the radish toast with pumpkin seeds (and salt and pepper). Then enjoy!
  5. TOP TIP: cut each slice of bread in half so you and your breakfast buddy can try all the different toppings.

Ingredients

All to be sourced organic where possible

  • 4 slices of bread of your choice
  • 2-4 tbsp of peanut butter
  • 2-4 tbsp (vegan) unsweetened yoghurt, Greek yoghurt or (vegan) soft cheese
  • A small handful of strawberries, washed and sliced
  • 1/4 cucumber, washed and sliced
  • 1/2 banana sliced
  • A small handful of radishes, washed and sliced

Toppings (optional):
1 tsp grated vegan organic dark chocolate or cacao nibs
1 tsp sesame seeds
1 tsp pumpkin seeds
1 tbsp maple syrup
A pinch of salt and pepper
