Sprout and sesame stir-fry

Poor sprouts. They get such bad press. But this recipe brings some non-traditional flavours to the party and really peps up the inevitable leftover sprouts. This recipe is delicious when mixed with brown rice udon noodles.

Method

  1. Heat the oil in a wok while you finely slice the sprouts. Fry the sprouts for 1 minute in the oil then add the cashew nuts and cook for another minute.
  2. Remove from the heat and add the soy sauce, sesame oil and sesame seeds. Serve immediately.

Ingredients

All to be sourced organic where possible

  • 1 tbsp olive oil
  • 250g leftover cooked sprouts
  • 2 tbsp cashew nuts, chopped
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds
