Christmas Tiffin

These treats are so packed with festive flavours that each one feels like Christmas in a mouthful. They taste far more intricate than they really are and are ideal for making with the kids.

Method

  1. Chop the chocolate into small chunks and put it in a glass or metal bowl with the butter, honey and ginger syrup. Set the bowl over a pan of gently simmering water and melt everything together, stirring occasionally.
  2. Remove the bowl from the heat. Add all the remaining ingredients and stir to combine. Tip the mixture into a small roasting tin lined with baking paper then place in the fridge, uncovered, to set for a few hours.
  3. Once set, lift the slab of tiffin out of the tin and cut it into squares. Wrap your squares in gift bags, jars or tins and prepare for adoration from the recipients. They will keep for up to a week in the fridge.

All to be sourced organic where possible

  • 300g 70% dark chocolate
  • 150g butter
  • 100g honey
  • 1 tbsp syrup from a jar of stem ginger
  • 160g ginger biscuits, roughly chopped
  • 125g dried cranberries
  • 3 chunks of stem ginger, finely chopped
  • 65g almonds, roughly chopped
