This fruity and sweet banana & blueberry loaf is flavoured with lemon and nutmeg. A special treat for breakfast or anytime of day!
Method
Heat oven to 200°C / 180°C fan / gas mark 6. Line a 2lb loaf tin with parchment paper.
If using, make the chia egg by mixing together the ground chia seeds and water. Set aside.
Melt the coconut oil in a pan.
Mix together the flour, sugar, nutmeg, salt and lemon zest in a bowl.
Mash bananas with a fork. Add the milk, vanilla extract, cooled coconut oil, lemon juice and egg. Mix well. Add banana mixture to the dry ingredients until well combined. Fold in the fresh blueberries. Do not overmix.
Carefully transfer the mixture into the loaf tin and spread evenly.
Place in the oven for 25-30 mins until golden or until an inserted cake skewer comes out completely clean. Once done, leave for 10 mins in the tin, then transfer to a rack and leave to cool completely before cutting.
